SERVES 4 PREP 10 MINS COOK 20 MINS
500g mince lamb
1 cup of continental parsley
1 Spanish red onion, finely chopped
1/2 tablespoon cumin seeds, toasted & crushed
1/2 tablespoon fennel seeds, toasted & crushed
1 tablespoon turmeric powder
1 tablespoon paprika powder
Black pepper and salt to season
Coriander leaves for garnish
Vegetable oil to fry
CUCUMBER & CORIANDER YOGURT
½ cup of Lebanese cucumber, diced
1 ½ cups of Greek yogurt
Juice of ½ lemon
½ tsp paprika powder
Coriander leaves, to garnish
1. . Mix the mince with parsley, onion, cumin, fennel, turmeric and paprika powder. Season with salt and pepper. Mix and combined well.
2. Roll into 12 oval shape, cover and chill.
3. Meanwhile, heat the 3 tbsp oil in a large frying pan. When hot, cook the koftas, turning occasionally, for 6-7 minutes, until brown evenly and cooked through. Remove to kitchen paper.
4. To prepare the cucumber & coriander yogurt, combine diced cucumber, Greek yogurt, lemon juice & chopped coriander. Season with salt & pepper. Finish with paprika powder and garnish with coriander leaves.
